Ingredients

  • 75g unsalted butter

  • 250mls water

  • Pinch of salt

  • 150g plain flour

  • 4 eggs

  • 75g grated gruyere cheese

Method

  1. Pre-heat the oven to 210’c.

  2. Place the butter, water and salt in a heavy based medium saucepan and bring to the boil.

  3. Remove from the heat a stir in the flour until combined.

  4. Place back on a low heat and stir with a spatula until the mixture is dry or there’s no more steam coming from it.

  5. Put this mixture in a stand mixer and mix with a paddle attachment until any excess steam has gone.

  6. Then add one egg at a time to the mixture.

  7. Once all the eggs have been added then place the cheese and mix to combine.

  8. Add this mixture to a piping bag.

  9. Place baking paper on two baking trays.

  10. Pipe the mixture onto the trays in rounds.

  11. Put in the oven and bake for 25 mins or until puffed up and browned.
