My Best Croissants in Paris

Croissants are a weakness of mine and have been for a long time now. My best croissants in Paris list below has been accumulated over the last three years since we first moved to Paris. Now it consists of delicious treats that anyone visiting this amazing city will want to try.

Firstly I must say though that I’ve tried all of the croissants in the list of my best croissants in Paris. Buttery goodness in all as I never tried ones made from margarine. What you will realise when you try them is that they will be a lot different from the ones you’ve tried at home. It’s the ingredients mainly. Butter and flour from France, there’s no beating it.

  1. The view from Le Traditionnel tir du canon Nice

    One of the best views in town is from the top of the hill at Le Traditionnel tir du canon. You can see the beach, markets and the whole city from the top of the hill.
    The canon itself used to go off every day at noon. It’s sound does still to this day which gets many birds a flying around the city but the actual canon doesn’t go off anymore.

  4. Explore the old town and port area

    At least set aside a whole day if possible if not two to explore the old town and port area with it’s many old buildings, chapels, museums, shops and restaurants and bars to visit.

  5. Dance in the streets

    Calling out around the world are you ready for a brand new beat. The sun has gone down and in Nice at Place Garibaldi there is always some dancing in the streets. Go join in if you know how or just go to watch.

  6. Saleya Marché

    This is one of the best markets in Nice. Also on my top ten for France. The Saleya Marché is open everyday. Monday’s as you can see by the picture at the top of the page is a Antiques market. Then from Tuesday til Sunday it’s a food and flower market.

  7. Nice Food and Wine Tours

    Nadia from Nice Food and Wine Tours is one of the best tour guides I’ve come across in France. Well, not including myself of course. Nadia will show you the sights on one of her amazing tours as well as give you some amazing tastings and even lunch depending on the tour you take.   8. Explore the cities statues and fountains

    Nice is a fabulous place to take a stroll as I mention below. So a great thing to do is to walk around and search out it’s many fabulous statues and fountains that are scattered all around the city.

  9. Take a nap or stroll along the Promenade des Anglais

    When the deck chairs are empty along the Promenade des Anglais why not have a nap under the sun or simply just take a stroll along the promenade like many have done before.

  10. Musée Matisse

    This museum dedicated to the works of the artist Matisse is one of many museums in Nice. It’s gardens house roman ruins so if you are a lover of art and archeology then this is a great place to spend the morning or afternoon.

Baked Yuzu Tart Recipe

My local Japanese/Korean grocery store had some delicious Yuzu juice recently that I thought would make a delicious Yuzu curd. So I thought why not combine that with an amazing sweet pastry base and create my version of a Baked Yuzu tart recipe. It’s a lemon tarte that uses yuzu juice instead of lemon juice.

Baked Yuzu Tart Recipe

Ingredients

Pastry

  • 150g plain flour
  • 75g unsalted butter
  • 50g caster sugar
  • 1 egg yolk
  • 1 tbsp Yuzu Juice
A slice or two of this delicious Baked Yuzu Tarte
Slice and serve

Filling

  • 3/4 cup Yuzu Juice
  • 340g caster sugar
  • 4 large eggs
  • pinch of salt
  • 115g unsalted butter diced

Method

Time needed:

Utensils needed
Large bowl
Medium tarte tin
Pie weights
Medium saucepan
Whisk

  1. Make the pastry

    In a large bowl combine the flour butter and sugar and mix with your hands until it resembles breadcrumbs. Once combined add the egg yolk and juice and mix until it forms a dough. If needed add some more juice. Then place in the fridge for at least 20 mins

  2. Roll out pastry and blind bake

    Pre-heat the oven to 180’c.
    Roll the pastry out and place in a medium tart tin. Spike gently the pastry with a fork, place a layer of foil and add some baking beans. Bake for 15 minutes and then remove the beans and bake another 3 minutes. Remove from the oven and allow to cool slightly

  3. Make the filling

    Combine the juice, caster sugar, eggs and the salt in a medium saucepan and whisk over medium heat until the mixture thickens, roughly 15 minutes.

  4. Bake the tart

    Preheat the oven to 150’c and pour the filling mixture into the tart shell and bake for 20 minutes or until the middle has a gentle wobble to it. Allow to cool completely before serving.

Amazing place in the old town of Nice that roasts meats. They had run out of potatoes when I was there and so I had the ratatouille instead and it was the best I’d had all trip.

Ratatouille Tarte Recipe

Recently I had the pleasure of showing a group of five amazing Australians around the Cote D’Azur on my Dazzling Cote D’Azur tour. We had so much amazing food on the tour, especially in Nice. My main inspiration from the trip came from the delicious ratatouille that I tried. So I’ve created for you today a delicious Ratatouille Tarte recipe to try. Hope you enjoy it.

Inspired by my recent tour of the Cote D’Azur is my take on a Ratatouille Tarte.

Ratatouille Tarte Recipe

Ingredients

Pastry

  • 340g all purpose flour
  • 2g salt or 1/4 tsp whichever works for you
  • 170g cold unsalted butter
  • 90ml ice cold water

Filling

  • 100g Sun-dried Tomatoes
  • Aubergine x 1
  • Green Zucchini x 1
  • Yellow Zucchini x 1
  • Carrot x 1
  • Red Capsicum x 1
  • 1tsp dried thyme
  • Salt and Pepper to taste
  • 50g goats cheese
Start to add the fillings.
After blind baking start to add the fillings.

Don’t forget to add a whole lot of love and a touch of fabulousness anything you cook

Sprinkle the goats cheese over the cooked tart.

Oh and a quick tip. If you have left over vegetables from this ratatouille tarte then cut them into 4cm pieces, place them in a frypan with a little olive oil, dash of white or red wine vinegar, some dried thyme leaves and salt and pepper and cook until just tender.

Violà you have a delicious side dish for a week night dinner already done and no wastage.

Method

Time needed: 1 hour and 10 minutes.

Utensils needed:
Large round non stick springform pie tin

  1. Crease your tin

    To start either butter and flour or spray with non stick oil

  2. Start the pastry

    In a large bowl combine the flour and salt and whisk together.

  3. Add the butter

    Cut the butter into small cubes and combine with the flour/salt mixture by rubbing together with your fingers until the mixture resembles breadcrumbs.

  4. Finish pastry

    Start to add the water 1 tbsp at a time until the mixture starts to form into pastry. Knead slightly on a lightly floured bench and form a disc. Wrap this in cling wrap and let it rest in the fridge for at least 20 minutes.

  5. Prep your vegetables

    Blitz the sun-dried tomatoes in a food processor until they resemble a course crumb. Slice thinly either with a mandolin or carefully with a knife the vegetables.

  6. Blind bake the tarte shell

    Take the pastry out and roll out to about 1/8 inch thick and place over the tarte tin. Push lightly into the sides being careful not to tare the pastry. Then with a knife cute off any edges. Place back in the fridge for another 20 minutes. Preheat the oven 180’c. Blind bake the pie crust for 15 minutes then remove the beans/rice that you’ve used to blind bake and bake for another 5-7 minutes until the crust is lightly browned.

  7. Add the vegetables

    In a spiral pattern add the vegetables starting with the eggplant, zucchinis, carrot, more zucchini and then finish with the capsicum in the middle. Make sure you pack them in as they will shrink a little when cooking. Then sprinkle over the thyme and salt and pepper.

  8. Bake, finish and enjoy

    Place back in the over and cook for at least 30 minutes or until the vegetables are all cooked. Take out of the oven and crumble over the goats cheese. Remove carefully from the tin and transfer to a plate and serve. Eat with a nice rocket salad and my version of Patatas bravas coming next week.
