Lockdown has happened here in France and I’ve defiantly returned to cooking and this no knead bread recipe is one of my favourites. It’s been great travelling around Paris and France but now I find myself getting comfort from just staying at home and cooking.
No Knead Bread Recipe
- 450 grams bread flour or T55 flour
- 1 packet of instant dried yeast or 7 grams
- 1 tbsp of salt
- 390 grams of water

Time needed: 55 minutes.
55 minutes for preparation and cooking and overnight for the prove.
- Make the dough
In a large bowl combined all the ingredients and mix until combined
Cover the bowl and place in the fridge overnight or for at lest 12 hours. Take out of the fridge and bring to room temperature an hour before baking.
- Bake – Pre heat
Pre-heat the oven to 220’c or 428’f with a dutch oven inside for 20 minutes
Pour the dough onto a baking sheet sprinkled with flour and then place this in the pre heated dutch oven (or a baking tray), place the lid on and bake for 25 minutes. Remove the lid and then bake for another 20 minutes or until the bottom of the bread has a hollow sound when you tap it.
Eat with some delicious French butter and salt warm from the oven or later in the day or the next day toasted with some homemade jam.
