Galette de Chou-Fleur - Cauliflower Pancakes

These delicious galette de chou-fleur or cauliflower pancakes should begin to rival whole roasted cauliflowers on insta in my opinion.

Ingredients

  • 55g all-purpose flour

  • 1 tsp turmeric

  • 1/4 tsp cayenne pepper

  • 100mls pouring cream

  • 1 egg

  • 100g grated cheese

  • 1 onion grated

  • 250g grated cauliflower

  • Salt and pepper

  • 50g unsalted butter

Serves 4 people

Method

  1. In a large bowl whisk together the flour, turmeric and cayenne pepper

  2. Add the cream and whisk until combined

  3. In a small bowl whisk the egg together and then add this to the batter then whisk until combined

  4. Change to a spatula and mix in the cheese

  5. Follow this with the onion and then cauliflower until every thing is combined

  6. Season with the salt and pepper

  7. Place plastic wrap over the bowl and place in the fridge for 30 minutes

  8. In a heavy based frypan heat half the butter and add a large tablespoon of the mixture into the pan. Flatten a little to create the shape you’d like. You should get six to a pan.

  9. Cook each galette for 4 minutes then flip and cook the other side for 4 minutes

  10. Set aside on a plate once cooked and repeat with the remain butter and batter

  11. Serve with a nice oven roasted salmon fillet and some of my hollandaise sauce.

These Galette de Chou-Fleur or Cauliflower Pancakes are the way that the French get their children to eat cauliflower. But I feel that it's a fantastic meal on it's own or a great side dish to go with some Salmon fillets and my delicious hollandaise sauce.
