Spatchcock Chicken De Provence

Spatchcock Chicken de Provence

Ingredients

Whole Chicken
1 Carrot roughly chopped
1 Onion roughly chopped
1 Zucchini roughly chopped
1 Red or Green Capsicum roughly chopped
2 Tbsps Olive Oil
Salt and Pepper to taste
3 Tbsps of Herbes de Provence mixture

Method

  1. Spatchcock the chicken by splitting the chicken down the spine flattening it out. This will help to roast the chicken quicker

  2. Set the oven to 190’c or 375’f

  3. Place the chicken on a sheet pan tray and flatten out

  4. Toss the carrot, onion, zucchini and capsicum around the chicken and pour over the olive oil

  5. Season with salt and pepper

  6. Then sprinkle over the chicken and vegetables with the herbs de Provence

  7. Rub this into the chicken

  8. Bake to between 45 minutes to an hour depending on the size of the chicken

  9. Allow to rest covered with alfoil for around 10 minutes and then serve


    Delicious. I serve it with a side salad and some cauliflower puree or some potatoes that have been roasted with the vegetables if you're not doing keto like me.
