Sablés aux Pépites de Chocolat - Chocolate Chip Biscuits
Ingredients
190g plain all purpose flour
1/2 tsp bicarbonate soda
1/2 tsp salt
125g unsalted butter
55g light brown sugar
110g caster sugar
1 egg beaten
1 tsp vanilla extract
100g chocolate chips
50g toasted almonds chopped
Makes 12 biscuits
Method
Preheat oven to 180’c
Line two baking trays with baking paper
In a large bowl sift the flour, bicarbonate soda and salt into a large bowl
Using a stand mixer with a paddle attachment mix the butter and sugars for 8-10 minutes until light and fluffy
Add the egg and vanilla extract and mix until combined
Sift in the flour and mix until combined on low speed
Once the flour mix is combined add the chocolate chips and almonds and mix until combined
Using an ice-cream scoop to measure out even amounts of the choc chip biscuit mixture onto the paper and trays, two rows of three biscuits as they will spread out
Bake in an oven for 10-15mins or until golden brown around the edges
Remove from oven and rest on tray for 5 minutes
Place on wire racks and allow to cool then enjoy
